Greek Yogurt Coffee Cake Loaf

– ½ cup (1 stick) unsalted butter room temperature – 1 ¾ cup granulated sugar divided – 1 teaspoon vanilla extract – 2 large eggs – 2 cups all purpose flour – 1 teaspoon baking powder – 1 teaspoon baking soda – 1 cup whole milk plain Greek yogurt – ¾ cup firmly packed light brown sugar – 2 teaspoons ground cinnamon – nonstick vegetable oil spray

Instructions:

Add butter and 1 cup (198 grams) granulated sugar to a medium-sized mixing bowl. Beat butter and sugar using a stand or hand-held mixer, until pale in color, about 2 minutes.
