This tomato, cucumber, and avocado salad is a healthy Mexican side dish to serve alongside tacos, fajitas, enchiladas, and more! With only five main ingredients, this side dish whips up in under 15 minutes.

You'll Need:

– yellow cherry tomatoes – red cherry tomatoes  – English cucumber –red onion – avocados – cilantro – olive oil – balsamic vinegar –  salt & pepper


Place the chopped tomatoes, cucumber, red onion, avocado and cilantro in a medium sized bowl. Drizzle with olive oil and balsamic vinegar. Season with salt and pepper to taste.


Gently stir together until everything is combined. Serve immediately.

Make Ahead:

If you want to prep this salad ahead of time, hold off on adding the avocado, olive oil, and balsamic. If these ingredients sit too long, they will begin to discolor the entire dish. So just make sure you add those three ingredients in right before serving.
