Mexican Avocado Salad

This 15 minute tomato, cucumber, and avocado salad is a healthy Mexican-inspired side dish to serve alongside tacos, fajitas, and enchiladas.

You'll Need:

– 5 ounces red cherry tomatoes  – 5 ounces yellow cherry tomatoes  – 1 medium English cucumber – 1/2 medium red onion – 2 avocados  – 1/2 cup fresh cilantro – 1/8 cup balsamic vinegar – 1/8 cup extra virgin olive oil – 1 teaspoon salt – 1/4 teaspoon black pepper


Wash and chop all of the vegetables.


Place the chopped tomatoes, cucumber, red onion, avocado and cilantro in a medium sized bowl. Drizzle with olive oil and balsamic vinegar. Season with salt and pepper to taste.


Gently stir together until everything is combined. Serve immediately.
