Crispy Pork Gyros

Crispy pork gyros are a great option for an easy, weeknight version of your favorite Greek food. They're made with crispy pork & fresh vegetables, all on a soft, warm pita.

Ingredients

  • 5 cups pork shoulder cooked, shredded
  • 2 teaspoon garlic powder
  • 2 teaspoon onion powder
  • 2 teaspoon dried oregano
  • ½ teaspoon dried parsley
  • ½ teaspoon dried basil
  • ¾ teaspoon salt
  • 1 cup tzatziki homemade or store bought
  • ¾ cup red onion thinly sliced
  • 1 seedless cucumber thinly sliced
  • 1 ½ cups cherry tomatoes sliced in half
  • 8 pita or naan

Instructions

  • Preheat oven to 400 °F.
  • Mix spices in a small bowl. Toss spices and pork together.
  • Spread pork on a sheet pan. Cook for 15 minutes.
  • Meanwhile, chop the vegetables.
  • Once pork is complete, broil for an additional 1-3 minutes until the outside of the pork becomes crispy.
  • Heat the pita up in the oven or toaster oven. Assemble the gyros beginning with tzatziki, shredded pork, and chopped vegetables.
