Instructions

For Blackberry Simple Syrup

  • Add blackberries, granulated sugar, and one cup of water to a medium-sized saucepan. Cook over medium-high until the mixture begins to boil.
  • Once boiling, cook for an additional 5 minutes, stirring often, to ensure the mixture doesn’t boil over. The simple syrup will turn dark purple and thicken.
  • Remove from the heat, and allow the mixture to cool for about 30 minutes until it has stopped steaming.
  • Place a fine mesh strainer over a bowl. Pour the mixture into the strainer to separate the simple syrup from the seeds. Push on the blackberries in the strainer with a silicone spatula to extract more juice. Add the simple syrup to a squeeze bottle, and discard the seeds.

For Orange Blackberry Cocktail

  • Add mint leaves to the bottom of a cocktail shaker and muddle with a cocktail muddle or the back of a wooden spoon until you begin to smell the mint.
  • Add orange juice, vodka, blackberry simple syrup, and a handful of ice to the cocktail shaker.
  • Since the cocktail shaker will be very full, mix and chill the cocktail by transferring from one cup of the cocktail shaker to the other.
  • Prepare 4 lowball glasses by placing 2-3 orange slices around the outside wall of the glass. Then fill partway with ice. Strain 4 ounces of the cocktail using a Hawthorne strainer into the prepared glasses. Top each glass with 2 ounces of Fresca sparkling soda water.
  • Optionally, garnish with additional mint and orange slices.

Notes

The blackberry simple syrup should yield about 10.5 ounces, enough to make this recipe 3 times. You can store leftover syrup in a sealed bottle in the refrigerator for up to 2 weeks.
While this drink looks pretty with pebble ice, this type of ice melts quickly and dilutes the cocktail. Personally, I'd recommend using larger ice cubes.
