Ingredients

  • 9 lb boneless pork shoulder butt roast
  • 12 fl. oz. Belgian white beer

Instructions

  • Remove any excess fat from the outside of the pork shoulder butt roast. Cut pork shoulder into 3-4 medium sized pieces so it will fit nicely in the Instant Pot.
  • Add beer to the bottom of the Instant Pot. Add in pork shoulder pieces.
  • Close the Instant Pot lid and make sure the valve is set to 'sealing.' Pressure cook on high for 90 minutes. Once pressure cooking is complete, allow meat to naturally vent for an additional 45 minutes (no need to touch anything on the Instant Pot, just let it sit).
  • Switch the Instant Pot valve to 'venting' and allow any additional pressure to be released. Remove pork from Instant Pot.
  • To shred pork, place in a stand mixer with a paddle attachment. Mix on medium speed until all pork is shredded. You may have to shred pork in two separate batches. If you don't have a stand mixer, you can also shred the pork using two forks.
  • Store pork in the fridge once completely cooled.
