Heat oven to 350°F (175°C).
Add dried apricots, almonds, apricot jam, rosemary, and salt to a mixing bowl and stir to combine.
Place the brie on a parchment-lined baking sheet. Top with apricot mixture. Bake for 10-12 minutes, until you can touch the outside of the cheese and feel that it is melted inside.
Allow the cheese to rest and firm up slightly for 5 minutes. Serve alongside crackers.
If you're hosting, you can prepare the baked brie in the morning. Store the baked brie topped with the apricot mixture in the refrigerator. Then, when your guests arrive, pop the brie in the oven to bake.
If you're looking for a bigger appetizer, try adding the apricot baked brie to a charcuterie board.
