Cast Iron Skillet Blackberry Crisp

Cast iron skillet blackberry crisp is one of my absolute favorite summer desserts, and it's perfect for hosting. Serve with some vanilla ice cream and fresh mint!

  • Heat oven to 350°F (175°C).
  • Whisk together flour, brown sugar, oats, ground cinnamon, vanilla extract, and salt in a large mixing bowl. Add in room temperature butter (save the wrappers for later). Using clean hands, gently press the butter into the dry ingredients until all the butter has been worked into pea-sized clumps.
  • Use the leftover butter wrappers to grease a 12 inch (30 cm) cast iron skillet.
  • Layer the blackberries on the bottom of the skillet. Evenly sprinkle the oat and sugar topping over the blackberries.
  • Bake for 30 - 35 minutes until the top has slightly browned and the blackberries are softened. Serve with vanilla ice cream and garnish with mint.

Reheating Instructions: To reheat, heat oven to 350°F (175°C). Place the skillet covered with foil into the oven and cook for 30-40 minutes until warmed.
Make Ahead: Assemble the blackberry skillet as directed the night before you need to serve it. Then, cover with aluminum foil and refrigerate. To bake the blackberry crisp, heat the oven to 350°F (175°C). Remove the foil and place the skillet in the oven to cook for 35 - 40 minutes, until the blackberries are warmed through and the top is golden brown.
To serve: Break up the crisp topping and mix with the blackberries. I love serving with some ice cream and fresh mint.
