New Year's Eve Charcuterie Board

In under 30 minutes, build a New Year's Eve charcuterie board appetizer filled with delicious finger food. This is the perfect grazing platter for a party that lasts until midnight.

Ingredients

  • 8 ounces brie wheel
  • 4 ounces thinly sliced cheddar cheese
  • 4 ounces thinly sliced provolone cheese
  • 4 ounces cheddar cheese cubes
  • 4 ounces white cheddar cheese cubes
  • 4 ounces spicy Italian dry salami
  • 5 ounces chocolate covered açai
  • 3 ounces pitted black olives
  • 2.5 ounces roasted, salted pistachios
  • 1 ounce salted popcorn
  • 5.5 ounces assorted crackers
  • 14 ounces black grapes cut into small clusters
  • 6 ounces blackberries
  • 2 ounces dried mango

Instructions

  • Slice brie cheese into wedges. Using a star cookie cutter, cut cheddar cheese slices and provolone slices into stars. Thread cubes of cheddar and white cheddar cheese onto decorative toothpicks. Set aside.
  • Make two salami roses by placing a ring of salami on the lip of a round glass. Continue building up the salami by layering pieces on top of each other. Once the rose has achieved the thickness you like, flip the glass over, and release the rose.
  • Add chocolate covered açai, black olives, pistachios, and popcorn to small serving bowls.
  • To assemble, place the sliced brie in the center of the board. Place a salami rose on each side of the brie.
  • Place the chocolate covered açai, black olives, pistachios, and popcorn serving bowls on and around the board.
  • Pile crackers around the brie cheese and on the outer edges of the board.
  • Place the cheddar cheese on toothpicks around the outer edges of the board.
  • Fill in the remaining spaces with grapes, blackberries, and dried mango.
  • Garnish with cheese stars and optionally, non-edible disco balls. Serve immediately.

Notes

Try pairing the board with sparkling Lambrusco sangria.
Use a board or platter that is 14 inches (35 cm) round. Don't use a much larger platter, otherwise, you will not be able to achieve this full and beautiful look.
The flavor and texture of cheeses are best at room temperature. Take the cheese board out about 15 - 30 minutes before your guests arrive.
