Ingredients You Need
- Phyllo shells: You'll find these shells in the freezer section at the grocery store. They're all prepped and ready to use immediately.
- Brie cheese: You don't have much prep for this dish. Just cut the brie into mini, bite-sized pieces.
- Cranberry sauce: I prefer to use homemade cranberry sauce. However, canned cranberry sauce can work in a pinch.
- Fresh rosemary: Dried rosemary will work too.
- Maldon sea salt flakes: If you taste the appetizer and feel like it's not salty enough, add some sea salt flakes for garnish.
How To Make This Recipe
This may just be the fastest appetizer bite you'll ever make. You only need 15 minutes, and the appetizer will be ready to serve!
1. Place phyllo shells on a baking sheet lined with parchment paper. Add about 1 teaspoon (4 - 5 grams) of cranberry sauce in each shell.
2. Top each shell with a cube of brie and a sprinkle of rosemary.
Bake for 7 - 10 minutes until the cheese is slightly melted and the shells are golden brown. Optionally, taste and top with Maldon sea salt flakes as needed.

- Make Ahead: You can prepare all of the ingredients ahead of time, then assemble and bake right before you're ready to serve.
- There's no need to keep these appetizer bites piping hot. They taste delicious at room temperature as well.
- For an elegant presentation, serve these phyllo cup appetizer bites on your favorite serving tray. Optionally, add some additional bites (like these apple pecan crostini or fig and goat cheese dip) to the serving tray for a more elaborate appetizer.
Recipe FAQs
The normal sheets of phyllo dough aren't pre-baked like the phyllo shells. I would not recommend using the large sheets.
Sure, if you don't like brie, you can substitute for goat cheese or another cheese that will quickly warm in the oven.
I prefer to use homemade cranberry sauce, as I feel that it has a better taste. If you're making a large batch of cranberry sauce for holiday dinner, just make a little more and use it in the phyllo cups.
