Ingredients You Need
What's great about cheese boards is that you can easily substitute ingredients to fit the needs of your guests. Here are the ingredients I used as well as some substitution ideas.
- Brie: If you don't like brie, try a wheel of gouda cheese.
- Thinly sliced cheddar cheese: Any type of golden colored cheddar cheese will work. Feel free to opt for a sharp or mild cheddar.
- Thinly sliced provolone cheese: You can also use Swiss cheese, just make sure there aren't too many holes in it.
- Cheddar/white cheddar cheese cubes: You can buy a block of cheese and cut these cubes yourself. However, if you're hosting a New Year's Eve party and need to save time, the pre-cut cheese cubes are an easy solution.
- Italian dry salami: To make the salami roses, make sure your sausage is thin and cut into small circles.
- Chocolate covered açai: Opt for chocolate covered almonds or another chocolate coated candy for a pop of sweetness.
- Black olives: You can also substitute with Kalamata olives if you prefer.
- Pistachios: Be sure to purchase pistachios that are salted, so they're ready to eat straight from the bag. I like to buy pistachios with the shell on them so it fits with the theme of the board.
- Popcorn: Feel free to pop your popcorn, or purchase a bag of pre-popped popcorn to save time.
- Assorted crackers: Any crackers will work for this New Year's Eve charcuterie board.
- Black grapes: If you can't find black grapes, dark purple grapes will also work. You want something dark to keep with the gold, black, and white theme.
- Blackberries: Don't forget to wash and dry the berries before using them.
- Dried mango: I prefer unsweetened dried mango, as it pairs better with the other ingredients on this board.
- Garnishes: You'll want some decorative garnishes to help add pizazz to the cheese board. I used these mini disco balls, glitter star toothpicks, and golden bamboo skewers. I also love these disco ball toothpicks.
How To Make This Recipe
Here's a step-by-step guide for assembling the New Year's Eve charcuterie platter.
1. First, it's time to cut all of the cheese for the board. Slice brie cheese into wedges. It's best to cut the brie while it's still cold (it sticks less to the knife), and then it can come up to room temperature to eat.
Next, grab a small (2 inch or 5 cm) star cookie cutter, and cut cheddar cheese slices and provolone slices. You'll have some excess pieces of leftover cheese after this process. Don't be tempted to waste this cheese, it's great on a sandwich or in a quesadilla.
2. Thread cubes of cheddar and white cheddar cheese onto decorative toothpicks. I find that three cubes per toothpick is the perfect amount!
3. Next, it's time to make the sausage roses. Start by placing a ring of salami on the lip of a round glass. I like to use a stemless wine glass.
Continue building up the salami by layering pieces on top of each other. Once the rose has achieved the thickness you like, flip the glass over, and release the rose.
4. Next, add chocolate covered açai, black olives, pistachios, and popcorn to small serving bowls. These bowls are helpful for ingredients that have juices (like olives) that could ruin other items on the board if they leak. It's also helpful for ingredients that are small and could get lost on the board once it's all assembled.
5. To assemble, place the sliced brie in the center of the board.
6. Place a sausage rose on each side of the brie.
7. Place the chocolate covered açai, black olives, pistachios, and popcorn serving bowls on and around the board. Personally, I like having some elements off of the board to provide some visual interest!
8. Pile crackers around the brie cheese and on the outer edges of the board.
9. Place the cheddar cheese on toothpicks around the outer edges of the board. Make sure the pretty tops of the toothpicks are sticking up where people can see them.
10. Fill in the remaining spaces with grapes, blackberries, and dried mango.
11. Finally, it's time to garnish the charcuterie board. Don't skip this step! The final garnishes are what make the board pop, and it helps pull everything together visually.
Garnish the board with cheese stars and optionally, non-edible disco balls. You can immediately serve and enjoy.
